Old Fashioned Griddle Cakes
2 cups all-purpose flour
1/4 cup sugar
1 tsp. salt
1 1/2 tbsp. baking powder
1 large egg
2 cups whole milk
2 tbsp. unsalted butter, melted
1 tsp. vanilla extract
Sift together dry ingredients. Make a well in the center and add egg and milk. Beat thoroughly. Add butter and vanilla. Stir until combined. Drop by spoonfuls on griddle greased with butter. When puffed and full of bubbles, turn. Cook until golden.
