Caramel French Toast

I am a firm believer in starting every day with a hot, filling breakfast. While my pantry does have a collection of cereal, in my world, it serves the purpose of a late night snack. There is something so satisfying about getting up, frying up some breakfast meats, and cooking. It makes me feel accomplished when I've made a delicious breakfast and enjoyed it sitting at the table reading the news or a new book. Starting the day with that type of accomplishment just seems to set the mood for a productive day.

You should start your day with this delicious Caramel French Toast and tell me that you don't feel amazing afterwards!

Cannoli Stuffed French Toast

Let me tell you about this French toast I made this morning. This is breakfast-in-bed type of food you should be serving your mother for Mother's Day. That is if you're able to cook for your mother. And she's a breakfast-in-bed type of mother. My mother is too far away to cook for. And she is not a breakfast-in-bed type of mom. She's a cold-cereal-at-the-table-and-hot-cup-of-tea-while-watching-the-news type of person. But if she was here and she was, I would totally make this for my mom.

Lemon-Berry Baked French Toast

It did something amazing here in NC yesterday. It SNOWED!

While I dislike the cold, there is something magical about watching the world around you turn white.  I watched from the windows at work as these beautiful little white flakes started floating down from the sky around 9am. I sat in a semi-dazed state, staring out the windows, wishing I could go out and play in it. I also watched snowplow after snowplow made its way down the road in front of my work.

I was thrilled at 2pm when work announced we were closing 2 hours early. By the time I left work there was about 3/4 of an inch of snow covering everything.

Baked Pecan-Pear French Toast

For some reason, I am hooked on these baked french toast recipes. They are simple to throw together and spend the perfect amount of time in the oven so that I can get ready for the day while it bakes into the perfect morning treat.

It also give the house the aroma of fresh baked goodies first thing in the morning, a great motivation to get moving on a lazy weekend morning.

I woke up wanting apple pie. However apple pie requires a fair amount of work. And it requires that you have more than 2 apples. So I improvised. Pie isn't a good breakfast choice anyways, right?

This morning's breakfast was simple to make but oh so yummy!

Blueberry Cream Cheese Baked French Toast

I have a new addiction. Pinterest. It is becoming a new obsession. I used to follow a lot of blogs however most of them are beginning to seem rather repetitive any more and became un-inspiring to me.

Now that I have found new inspiration, I figured I will make another attempt at blogging.

This recipe is inspired by a recipe I found on Pinterest. It looked delicious. Then when I looked at the recipe,  I was shocked. 12 eggs?!?!

The original recipe came from Chef-in-Training. I'm sure it was great the way it was. I didn't have a dozen eggs to use and I didn't have the entire night to let it set. I needed it immediately. So I changed it. It was still yummy!

Flan-Style French Toast

I have slept all day.

I have had a HORRIBLE migraine.

I really thought my head might explode. I still think it might.

I needed comfort food.

I really wanted to just make a big pan of flan and eat the entire thing for dinner.

Then that nagging voice in the back of my head, that sounds surprisingly like my mother, reminded me that wouldn't be very healthy. So I turned it into Flan-French-Toast. It's always good to be able to combine 2 of your favorite things into one delicious dish!

I am fairly certain this has just become my new favorite breakfast dish. Even though I just made it for dinner.

It's just pure heaven!

Flan-Style French Toast (serves 2)




1 C Half and Half
3 Eggs
1 tsp Vanilla Extract
6 Slices of Bread
1/3 C Sugar

Preheat the oven to 325.

In a heavy bottomed sauce pan, melt the sugar until it becomes a golden amber color.


Pour the sugar into two 7 or 10 oz custard cups, or a small baking dish.


In a bowl, whisk together half and half, eggs, and vanilla.


Add bread. Allow the bread to soak up as much of the liquid as possible. This should take about 5-10 minutes, depending on the bread.


Divide the bread between the two custard cups. (I did mine in a baking dish). Pour all the remaining liquid in too. If it isn't extremely soggy, add more half and half.


Place the custard cups into a baking dish. Fill the baking dish with approximately 1 inch of water.

Bake at 325 for 1 hour, or until fork inserted in the center comes out clean.

Remove from oven. Let rest for 15 minutes. Remove custard cups from the water. Slide a table knife around the edges and carefully invert onto a plate. The sugar will be very hot still.



To remove sugar from the dishes, just soak in warm water. It will dissolve in a few minutes.

Creme Brulee French Toast

Yesterday was against me. I am bruised, sunburned, and I smashed my finger.

I needed comfort food. I needed to read and escape my world.

I made Creme Brulee French Toast.



I finished reading The Help by Kathryn Stockett.

I was not impressed with the ending of the book, I didn't feel like it actually ended anything. Everything was left hanging. Slow to start, great story line, horrible ending. Maybe the movie will be better...

I was highly impressed with the French Toast. Thanks to Smitten Kitchen for a great recipe!


Creme Brulee French Toast (serves 2)
6 Slices of Bread, 1 1/2 inches thick
1/3 C Whole Milk
1/2 C Heavy Cream
2 Large Egg
1 Egg Yolk
4 Tbs Sugar
3 tsp Vanilla Extract
2 Tbs Orange Zest


Preheat oven to 325.


Whisk together milk, cream, eggs, egg yolk, sugar, vanilla, and orange zest.



Arrange bread slices in a baking dish that allows just enough room for the bread, to ensure the custard mix is absorbed evening into the bread. Allow the bread to sit for 30 minutes, turning once.


Bake at 325 for 30 minutes. It will start to puff in the oven.



Turn the French Toast halfway through.



When the French Toast is cooked, turn off the oven, transfer the toast to the a serving dish or onto individual plates. Set aside or place in the oven to keep warm.

In a medium or small heavy-bottomed sauce pan, melt 1/2 C Sugar.

Stirring constantly to allow for even melting of the sugar.



Remove from heat the moment it begins to turn a golden color. It will continue to cook and darken so you must work quickly.


Pour the hot sugar over the toast IMMEDIATELY. Allow the French Toast to cool a bit before serving. The sugar will be VERY HOT.
