Red Velvet Pancakes

After a stressful week, I needed some inspiration to motivate myself into having a semi-productive weekend. What better way to find that inspiration than when red velvet pancakes with mascarpone cheese frosting? If you've had a stressful week or are just looking for a delicious breakfast that takes only minutes to make, these pancakes are definitely for you!



Red Velvet Pancakes with Mascarpone Frosting
Serves 2-3

Pancakes:
1 cup all-purpose flour
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 Tbsp. cocoa powder
1 large egg
1 tsp. vanilla extract
1 cup buttermilk 
Red Food Coloring



In a large bowl, sift together dry ingredients. Make a well in the center and add egg, vanilla, and half cup of the buttermilk. Mix starting from the center outwards. Add remaining buttermilk and stir until combined. Add food coloring to reach desired color. 

Heat a skillet over medium heat, add oil or butter to the skillet. Cook pancakes until browned and surface is filled with bubbles. Flip and cook other side until browned. 

Serve with Mascarpone Cheese Frosting. 

Frosting:
8 oz. mascarpone cheese, room temperature
1 cup powdered sugar

With hand mixer, combine mascarpone cheese and powdered sugar. Mix on high speed until smooth. Add more sugar if needed to reach desired consistency.
