Cannoli Stuffed French Toast

Let me tell you about this French toast I made this morning. This is breakfast-in-bed type of food you should be serving your mother for Mother's Day. That is if you're able to cook for your mother. And she's a breakfast-in-bed type of mother. My mother is too far away to cook for. And she is not a breakfast-in-bed type of mom. She's a cold-cereal-at-the-table-and-hot-cup-of-tea-while-watching-the-news type of person. But if she was here and she was, I would totally make this for my mom.



Cannoli Stuffed French Toast
serves 2

1 egg
1/2 cup milk/cream
1 tsp. vanilla extract
8 small slices of bread

Whisk together egg, milk and vanilla. Dip bread in egg mixture and fry in lightly greased skillet until golden brown, turn and cook other side until golden.

Filling
1/2 cup ricotta or mascarpone cheese
1 tsp. vanilla extract
1/4 to 1 cup powdered sugar
1/4 cup mini semi-sweet chocolate chips

Using electric hand mixer, mix together cheese, vanilla, powdered sugar to taste. Stir in chocolate chips.


Assembly:
Top one slice of French toast with a fourth of the filling. Top with additional slice of French toast. Repeat until you have made 4 "sandwiches". Sprinkle with additional powdered sugar and/or additional chocolate chips.
