Baked French Pear Pancake

After an insanely stressful week, it is nice to be able to prepare a very fast, easy, and completely satisfying breakfast for my parents before I have to head home to NC.

This is one of the quickest breakfast I know how to make. It takes less than 4 minutes to put together, then the oven does the rest of the work.





Baked French Pear Pancake
Serves 3

1 can of pears, sliced, reserve ¾ cup of the juice
½ cup all-purpose flour
½ cup light brown sugar
4 eggs
2 tsp. vanilla extract
Dash salt
3 tbsp. unsalted butter, melted
1 tbsp. unsalted butter

Preheat oven to 375. Put a 10-inch cast iron skillet in to heat.

Combine pear juice, flour, sugar, eggs, vanilla, salt, and melted butter in the blender.  (You can add in 1/2 tsp. of cinnamon or other spice if desired to compliment the pears.) Mix for 15-30 seconds on high speed. Scrape down the sides of the blender. Give it a few more pulses to make sure it is will mixed.


Coat the hot cast iron skillet with 1 tbsp. butter. Pour in batter. Arrange pear slices in the skillet. Bake for 30 minutes or until puffy and browned. 

Serve with pure maple syrup or sprinkle with confectioner's sugar (or use both!).
